The Weihnachtsstollen is a traditional German fruit cake made with butter, rum-macerated sultanas, candied citrus peels and a marzipan (almond paste) filling. However, this Stollen is refined to a special treat after a Saxon family recipes, handed down in 1925, by using as toping an almond crust that crowns the light and brittle but moist texture of the cake of only a touch of sweetness. The ‘Christstollen’ keeps for several months and definitely matches the other more famous Saxon ‘Dresdner Stollen’, which has the traditional powdered sugar topping and is much denser and heavier. At Christmas time this specialty is sent by the Profittlichs all over the world. |
