The Weihnachtsstollen is a traditional German fruit cake made with butter, rum-macerated sultanas, candied citrus peels and a marzipan (almond paste) filling. However, this Stollen is refined to a special treat after a Saxon family recipes, handed down in 1925, by using as toping an almond crust that crowns the light and brittle but moist texture of the cake of only a touch of sweetness. The ‘Christstollen’ keeps for several months and definitely matches the other more famous Saxon ‘Dresdner Stollen’, which has the traditional powdered sugar topping and is much denser and heavier. At Christmas time this specialty is sent by the Profittlichs all over the world.

Find: The wines from the Ahr are at this time not widely available in Germany as well as in the USA. Most of the red wine production from this small region is consumed locally in nearby Bonn site of many government offices.

Racy Rieslings are grown on forbiddingly steep slopes along the Rhine as it flows from near Bingen to Koblenz to Bonn. Both sides of the river provide wind protected vineyards between the numerous ruins of castles and palaces along the most picturesque stretches of the Rhein.

The slate soil along the river implants a distinctive character.

This Riesling has a great body of fruit and fragrance. As Spätlese it provides the additional weight that the wine can easily carry without being overwhelmingly sweet. It easily stands out compared with the Gewürztraminer from the Pfalz.

 

Find: The wines from the Mittelrhein are at this time not widely available in the USA. I got this wine in a gift box with a Christstollen from regional Café Profittlich.

The largest wine growing region in Germany produces interesting wine of more complexity if grown closer to the Rhine. The wines are delicately fragrant, mild, soft, and medium-bodied.

The largest wine producing region in Germany.  Grown in the north on clay and mari soils produces pleasant mild wines rich in bouquet. Chalk, clay and loess soils in the south yield mild, fresh and often intense wines.

The white wines are aromatic, mild, round and full-bodied, expressive. The red wines are smooth and fruity.

Franken

Traditionally, most Franken wines are bottled in a squat, dark green flagon called a ‘Bocksbeutel’. In Franken – uniquely, Riesling is outperformed by Silvaner, the ‘King of Franken’.

Franken is in the eastern wine-growing regions, with most of its vineyards planted on hilly slopes of the Main River and its tributaries.

Franken wine is the most masculine of Germany's wines, often drier and earthier than wines from other regions and are characterized as vigorous, earthy, robust, dry, and often full-bodied.
