This simple tomato sauce takes 1.5 hours to prepare and results in an irresistibly full flavored experience of the sweet fruity taste of fresh ripe red tomatoes.

Get in Advance:

 

½ medium onion, finely chopped

2 garlic clove, minced

1 small carrot, finely chopped

1 stalk of celery with green top, finely chopped

1 cup of low-salt low-fat vegetable broth, divided

2 ½ pound of fresh tomatoes, cut in small pieces with stem basis discarded

½ cup of parsley, finely chopped

½ cup of basil, finely chopped

1 teaspoon of tomato paste

For 2-3-Portions. Prep time 90 min.

 

Chop vegetables

Cut onion in half lengthwise, and chop one half finely

Chop 2 garlic cloves finely

Chop carrot and celery finely

 

Cook hard vegetables

Braise onion, approx.. 5 min

Add minced garlic, stir

Deglaze with ½ cut of vegetable broth

Add carrots and celery

Stew for 20 min

 

Finish tomato sauce

Add sliced tomatoes, tomato paste, chopped basil and chopped parsley

Fold under onions and simmer for 15 min with closed lid

Thicken sauce by using a cooking spoon to smash some tomato pieces and then simmering without cover for 15 min.

 

Ready to Serve

Serve hot or cold.
