Ramen Noodles with Napa

and Straw Mushrooms

A full meal prepared in 20-30 min. Although in Ramen noodle soups besides of the essential noodles everything else can be added, here ALL other ingredients are essential for providing this unique Japanese taste experience.

This Japanese soup beats all others in its richness of flavor and as a satisfying meal. The ramen noodles provide the basis on which the Napa cabbage and straw mushrooms can develop their delicate tastes supported by the full bodied broth and other vege­tables. Absolutely delicious.

Get in Advance:


1/2 medium sized Napa (Chinese Cabbage)

2 packages of Top Ramen Noodle Soup (discarding the flavoring packets)

Salt-free Vegetable Broth powder

6-8 Garlic Gloves, chopped

Large root of fresh Ginger (2 in), chopped

1 teaspoon of Chinese Five Spice

2 tablespoons of Vegan Worcestershire Sauce

1 tablespoon of Low Sodium Tamari Sauce

1 15oz can of Medium Straw Mushrooms, whole and peeled.


˝ 15oz can of Baby Corn Pieces

˝ 15oz can of Bamboo Shots

˝ 15oz can of Bean Sprouts (or 12 oz of fresh Bean Sprouts)

Dried sheets of Low Sodium Seaweed, cut into 1/2in squares


Have On Hand:

Green Onions, finely chopped

I am using “Top Ramen” because I have finally found them.



Recipe modified to low-salt low-fat diet (Esselstyn Diet) after Tracy Carolyn :


For 3 (generous)-to 5 Portion (Total Prep Time: 20 min)


Chop Flavor Ingredients

Chop ginger (3 tablespoons)

Chop garlic (3 tablespoons)


Prepare the Vegetable Soup

In a large Sauce Pan:

Bring 5 cups of water and 5 table spoons of salt-free vegetable broth to a boil

Add chopped garlic and ginger

Add 1 teaspoon of Chinese Five Spice

Add 2 tablespoons of Worcestershire sauce and 1 tablespoon of Tamari sauce

Add without fluid baby corn (cut if big) and Bean sprouts,

Add without fluid straw mushrooms

Add cut seaweed sheets


Let simmer for 5min


While simmering

Chop and Add Napa

Quarter the halved Napa head and cut out stem

Chop finely

Add Napa and let simmer for 3 min or until Napa wilts.


While simmering

Cook Ramen Noodles

Bring 4 cups of water to a boil

Boil Ramen Noodle for 3 min

Strain in Colander, wash extensively with hot water, and set aside.


Serve Soup

Divide cooked Ramen noodles into large bowls

Fill bowls with vegetable stock

Sprinkle with chopped green onions
