Freezing Vacuum-Sealed Mackerel Filets


Deboned Mackerel Filets

Mackerel is one of the healthiest fish because it has a very high mono-unsaturated fat content and is high in Omega-3 poly-unsaturated fats. Unfortunately, mackerels are only available in my local fish market during the colder seasons affording to freeze them when in abundance. Fatty fish freeze well without losing their texture after slow thawing.

Frozen Vacuum-Sealed Portion

The storage time of frozen food can be extended by preventing freezer-burn, which occurs when water, subliming from the frozen tissue-bound state in to the surrounding  air-filled spaces, recrystallizes at the outer cold container walls, actually ‘freeze-drying’ the tissue. Vacuum packing of fresh wet filets before freezing eliminates the air and water pumping conditions.

Getting Started with Cooking Greens



Have ready

Mackerel filet, fresh, deboned


FoodSaver Vacuum Sealer

Vacuum Sealing

1. Wrap each portion in clear plastic wrap

2. Cut 4 inch long pieces from 8-in wide Heat-Seal Roll

3. Seal one end of roll section

4. Place portion into created pouch

5. Vacuum & Seal the filled pouch with “Gentile” &” Moist” setting


Place in single layer for fast even freezing

Wrap each Portion in Plastic Wrap


Use 8 in wide ‘Heat-Seal Roll’



Size of Freezing Pouch



Cut 4 inch Sections from 8 inch Roll

Seal one side of Section to make a Pouch



Vacuum Seal with Gentile & Moist Setting

Finished and ready for Freezing
