This is an easy and quick to prepare simple dish that is very satisfying even when served for dinner.

Served

The greens and tomatoes complement the earthy fresh taste of the baked potato. Plenty of dipping broth makes this quick meal light and very refreshing.

Getting Started with Cooking

 

Get in Advance:

 

1 onion, chopped

2 garlic cloves, minced

1 red onion, chopped

1 bunch of greens, cut to 1x1 in pieces

1 Russet potato

Low-fat vegetable broth

 

Have On Hand:

1 -2 ripe tomatoes, diced

fresh herbs (thyme and sage)

 

Serve with hearty crisp bread

Mixed greens

 

Recipe

(Standard vegan recipe):

 

For 1 Portion. Prep time 15 min.

 

Baked Potato

Wrap wetted russet potato in wax paper and microwave (see 024 Chicken Wings)

 

Prepare the Base

Sear the chopped onion in dry hot pan until browned

Add minced garlic and stir for 30 sec

Deglaze with 1 cup of vegetable broth

 

Stew the Greens

Add chopped red onion and fresh herbs

Cook for 5 min with closed lid.

Add cut greens and diced tomatoes , fold under onions and cook with closed lid for 2 – 3 min until greens start to wilt

Remove stems of herbs

Add additional broth so as to have plenty of fluid for the potato

 

Serve

Serve right after greens started to wild.

Ladle stewed greens with broth over the peeled and sliced baked potato.
