Homemade Tomato Sauce

using Green and Ripe Red Tomatoes

Soba noodles with this irresistible tomato sauce.

This tomato sauce takes 4 hours to prepare. However, this effort is rewarded by a chunky thick consistency and amazingly rich taste.

Get in Advance:

 

10 ripe red tomatoes

3 green tomatoes, optional

1 onion, chopped

1 green bell pepper, deseeded and chopped

2 carrots, chopped

4 gloves of garlic, minced

½ cup of fresh basil, stems removed, chopped

½ cup of red wine or low-salt vegetable broth

2 whole stalks of celery

1 bay leaf

2 tablespoons of tomato paste

2-3 springs of thyme or ½ teaspoon dry thyme

3-5 springs of oregano or ½ teaspoon of dry oregano

½ of a quarter teaspoon white pepper

2 tablespoons sugar

For 3-4 Portions. Prep time 4 hours.

 

Peel Tomatoes

Bing a pot of water to a boil

Have ready a large bowl of iced water

Plunge whole tomato into boiling water for 1 min until skin splits and starts to peel

Remove tomato with slotted spoon and place into ice bath for cooling down to be handled

Remove skin, cut in half, remove stem roots and squeeze out seeds

Puree 8 of the tomatoes with blender

 

Chop vegetables

Chop remaining two tomatoes and set aside

Chop onion, bell pepper, carrots and garlic

Chop fresh basil

 

Cook tomato sauce

In large sauce pan, braise onions 3-5 min until soften and browning

Reduce heat, deglaze with ½ cup of red wine or low-salt vegetable broth (shown)

Add bell pepper, carrots, garlic and cook for 5 min

Add pureed tomatoes

Stir in chopped tomatoes and basil

Add celery stalk and bay leaf

Bring to a boil and simmer covered for 2 hours

Add tomato paste, fresh or dry oregano and thyme, white pepper

Simmer for an additional 1 hour

Reduce volume whith cooking uncovered for another hour

 

Finishing up

Discard bay leaf, celery and stems if used

Add 2 tablespoons of sugar.
