This is a great fill-in dinner because the basics are staples and everything available in vegetables can be used.

Moist filling on a crisp dry crust: a refreshing but not heavy meal, even if you eat the entire pie in one serving. Before serving sprinkled with “Nutritional Yeast” (instead of traditional cheese).

Get in Advance:

1 Box of frozen Nature’s Heights Brown Rice Pizza  with two pizza crusts

1 Jar of your favorite low sodium pasta sauce

Amy’s Low Sodium Organic Pasta Sauce: Low Sodium Marinara

1 Bag of Nutritional Yeast

Vegetables:

Tomato, Peppers green and red, Mushrooms sliced, Onion, 2 Garlic cloves

Optionally:

Dr. Praeger’s California Veggie Burgers (see below)

Frozen Full Leave Spinach

Have On Hand:

Non-Stick Spray

Ingredients

Recipe

(modified from Engine 2, page 222):

 

For 1 (generous)-2 Portion

Preheat oven to 425 F

Put 1 frozen pizza crust on sprayed cooking tin

Spread generously Pasta Sauce on crust

Pile up shopped vegetables, mushrooms and Veggie burger patty

½ Red Bell Pepper

½ Green Bell Pepper

6 oz Sliced Mushrooms

1/2 large Tomato

1/2 medium Onion

1 Veggie Burger patty

½ package chopped spinach unfrozen and drained

Sprinkle with finely chopped Garlic cloves

Bake 15-25 min

Before serving, sprinkle with 1-2 tablespoons of Nutritional Yeast

 

Tips: 

The crust is very thin and may fall apart when transferred onto the serving plate. So spray baking tin with non-stick and bake till crust is brown.

Ready for the preheated 425 F oven to be baked for 15-25 min. Bake as long as necessary for the crust to become brown.

Used Walnut Acres organic fat-free low-sodium Tomato & Basil pasta sauce. Omitted burger for total fat reduction.

Came out great with crisp dry bottom and warm, moist and thick filling. Backed on top shelf at 425 degree F oven for 20 min.

 

Topping of Tomato Sauce and Onions, Peppers, Spinach, Mushrooms, Garlic and Tomatoes
